Smoked Mac And Cheese

Ingredients

  • 1/3 cup butter
  • 3-4 tbsp flour
  • 2 cups whole milk or half and half
  • 4 oz cream cheese
  • 3 cups shredded cheddar cheese
  • 6 slices gouda cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  • First, use a large pot of water to a boil and cook macaroni or penne pasta noodles until cooked. Set aside in a skillet!
  • You then will need to preheat your smoker to 225 degrees F using hardwood chips.
  • Heat an excellent 12-inch cast-iron skillet over medium heat. Melt 1/3 cup of butter and whisk in the 3 to 4 tablespoons of flour until it is smooth.
  • Slowly keep whisking the milk or half and half until it comes to a boil.
  • Turn down your heat to medium and whisk in the cream cheese until smooth.
  • Then whisk the gouda cheese, Parmesan cheese, and cheddar cheese, being sure to keep stirring until melted. Turn off the heat and pour everything in the macaroni or penne. Stir gently until the cheeses mix well with the noodles.
  • Place the skillet in the smoker. Be sure that the lid is firmly closed. Smoke your dish for at least two hours.
  • Serve your mac and cheese while it is hot. Enjoy!
